Sugar-free Pumpkin Spice Proffee

This sugar-free pumpkin spice proffee combines iced coffee, real pumpkin, warm pumpkin pie spice, vanilla protein powder, and your favorite milk. It’s a simple way to make a protein-focused pumpkin spice coffee drink at home, and you can adjust the coffee, spice, and sweetness to suit you.

What is pumpkin spice proffee?

“Proffee” is simply coffee mixed with protein powder. In this version, the vanilla protein powder and milk are frothed together, while the instant coffee, pumpkin, sweetener, and pumpkin pie spice make up the coffee layer. Pouring both over ice and stirring gives you a creamy pumpkin coffee without needing a flavored syrup.

A few ingredient notes

Be sure to use plain canned pumpkin, not pumpkin pie filling. Pie filling already contains added sugar and spices, so it won’t work the same way here.

Use the vanilla protein powder you prefer. Clean Simple Eats is one I use and like, but you can choose a protein powder based on the ingredients and flavor you want.

Any milk you enjoy will work. I sometimes use Fairlife to add more protein to the drink. For the coffee, Nescafé Gold Blonde Espresso is a smooth option that isn’t bitter, but your favorite instant coffee is fine.

The recipe includes a range for the coffee, pumpkin pie spice, and sweetener. Start with the lower amount if you prefer a milder drink, or use the higher amount for a stronger coffee and spice flavor. Brown Swerve is the sweetener used in the recipe, though you can use the sugar-free sweetener you keep on hand.

Tips for making sugar-free pumpkin spice proffee

  • Use warm water so the instant coffee dissolves before it goes over the ice.
  • Froth the pumpkin with the coffee mixture so it disperses evenly through the drink.
  • Froth the milk and protein powder separately to help the powder blend smoothly.
  • Stir the two layers together before drinking so the coffee, pumpkin, and vanilla flavors are evenly combined.

Ingredients

  • 1-2 t Instant Coffee
  • 4 oz Warm Water
  • 2 T Canned Pumpkin, just pumpkin, not pie filling You can leave this out if desired
  • 1/2-1 t Pumpkin Pie Spice
  • 1-2 T Sweetener, I used Brown Swerve
  • 1 Scoop Vanilla Protein Powder of Choice Or any desired flavor
  • 1 C Milk of Choice

Instructions

  • Glass with ice. Froth coffee, water, pumpkin, sweetener if desired, and pumpkin pie spice together. Froth milk and protein powder. Pour coffee mixture over ice. Pour milk and protein powder over ice. Stir and enjoy.
