These lemon raspberry overnight oats combine oats, non-fat Greek yogurt, chia seeds, vanilla protein powder, lemon, and plenty of raspberries in one creamy breakfast. The recipe makes four servings, so you can portion everything into jars or containers at once and have breakfast ready to grab from the refrigerator.

The oats are blended rather than left whole. That gives the base a smoother consistency and evenly distributes the yogurt, chia seeds, lemon, and protein powder. You can layer the raspberries in the jars or mix them right into the oat mixture.

Why These Lemon Raspberry Overnight Oats Work

Greek yogurt and vanilla protein powder add protein while helping create the creamy base. Lemon juice and zest brighten the flavor, and the raspberries add fruit throughout each serving.

Set out all four containers before you begin portioning. Add a little of the oat mixture to each one, then continue dividing it until all four servings look even. A kitchen scale can help you get the containers as close as possible to the same weight.

Use your milk of choice and a vanilla-flavored protein powder if you want to follow the flavor combination in the recipe. Since sweetener is added to taste, blend the base and taste it before deciding how much you need.

Keep the finished jars covered and refrigerated. Give the oats a stir before eating if the fruit and oat mixture have settled into distinct layers.

Ingredients

  • 1 1/2 C Milk of choice
  • 1 C Oats
  • 1 C Non-fat Greek Yogurt
  • 3 T Chia Seeds
  • 1 t Vanilla
  • 2-3 Scoops Protein Powder, I used a vanilla flavor
  • 1 T Lemon Juice
  • 2 t Lemon Zest
  • Sweetener to taste
  • 12 oz Raspberries, I used 6 oz and really felt that it needed more raspberries
  • Depending on how tart you want this recipe, you can increase or decrease the amount of lemon juice and zest. You can also sub lemon extract. Just start slow.

Instructions

  • In a blender place milk, oats, yogurt, chia seeds and blend. Add protein powder, lemon juice and extract. Blend and taste. Add sweetener and more lemon if you want more lemon flavor.
  • Once blended, you can layer your raspberries or mix them in. I layered mine. Evenly distribute the oat mixture to 4 containers. I use a scale to get them as close as possible to the same weight.
